THE CURSE of working in the restaurant industry is that there's rarely a night off - and when it comes, people in the business usually spend it eating out. But since most of his friends are also in the business, Silvertone owner Josh Childs considers this a perk. When he's not at his own restaurant (or hanging out with his two little girls), he's working behind the bar at Beehive or concocting plans to open a new place with his buddy, and fellow Beehive bartender, Cedric Adams (stay tuned for more details). Any night he does get off is usually spent visiting friends.
@ 6:15 p.m.: Peter Irving was the opening chef at Silvertone, and he and his wife, Natasha, opened this little place in Southie called Potbellies Kitchen. [They're changing the name to Saint Alfonzo's Kitchen.] I try to pop over there to start with a bite to eat. It's all really fresh comfort food.
@ 7:30 p.m.: I'll walk over to Pho Republique. I'm a friend of Jack [Bardy], who also owns the Beehive. Pho has been around forever but still flies under the radar. The food is solid and they have a cool little wine list.
@ 9:45 p.m.: I think Cat Silirie is the preeminent wine person in Boston. We became friends years ago, so I'll stop in to the Butcher Shop to see if she's there and to have a glass of wine.
@ midnight: Because it's across the street, the chances are good that I'll head over to the Beehive afterwards; I'll just pop in here for one. Then, next thing you know, it's last call.
@ 2 a.m.: By now, my better judgment tells me it's time to sneak out the back door and walk the three blocks back to my house.
