ANOTHER SIGN of spring are softshell crabs, in season for about a month each year. As part of his "30 Days, 30 Ways" promotion, 51 Lincoln chef/owner Jeff Fournier will be preparing them a different way each night in May. >> Over at the Beehive, come for the music, stay for the fries. Poutine, the gravy-soaked, cheese-drenched fries - the number-one guilt and comfort food in Montreal - has found its true home here. You might want to order dinner after scraping up the last crumbs, but then again, you might just want to order another round. >> Speaking of fries, I'd love to hear from you readers about Boston's best. I'm hooked on the ones served at the West Side Lounge in Cambridge (with a roasted-garlic aioli dipping sauce, so much more upscale than ketchup). What's your candidate? This year, yep: Tony Maws is doing two nights of Passover at his Craigie Street Bistrot on April 20 and 22. I'm guessing his matzo balls will rival my Aunt Grace's.
